CHOCOLATE CHIP COOKIES



1 cup butter at room temperature
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 1/2 t. vanilla
2 1/2 cups all-purpose flour
1 t. baking soda
1/2 t. salt
12 to 16 oz. chocolate chips
nuts if desired
In mixing bowl cream the butter, brown sugar, granulated sugar, vanilla, and eggs together.  Add soda and salt and beat slightly to blend.  Pour in all the flour and beat until flour is incorporated.  By hand, stir in the chocolate chips.  Use a tablespoon to drop bits of dough at least 3 inches apart on a cookie sheet lined with parchment paper.  Cook in 350 degree oven for about 12 to 15 minutes or desired crispness.  Remove from cookie sheet immediately with a thin spatula and place on paper towels to absorb excess oils. Makes 2 to 4 dozen cookies.
