ITALIAN FEATHER BREAD



2 pkgs. dry yeast
1 Tbsp. sugar
1 c. warm water
1/3 cup butter
3/4 hot water
2 t. salt
5 to 6 cups flour
cornmeal
egg white lightly beaten
     Stir together yeast, water, sugar and allow to proof.  Melt butter in hot water and allow to cool.  Combine mixtures, add salt, and begin to stir in flour to create a stiff dough.  Knead on floured surface and form 2 long loaves.  Place loaves on baking sheet which has been lined with cornmeal.  Make slits and allow bread to rise.  Brush with egg wash and cook in 425 degree oven about 40 minutes.
