MANGO & PEAR CHUTNEY



3 large ripe mangoes, peeled and cubed
1/3 cup raisins (optional)
2 peaches, pears, or plums, peeled and cubed
1 1/2 t. cinnamon
juice and zest of 3 limes
3 T. balsamic vinegar
1 clove of garlic, minced
1 small onion, minced
1 t. minced ginger
1/2 cup brown sugar
     Combine all ingredients in a saucepan and cook, stirring occasionally until fruit is tender and mixture is fairly thick. (This usually takes 30 to 45 minutes.)
