Blackening Seasoning For Fish




1/4 cup smoked paprika
4 teaspoons onion powder
4 teaspoons garlic powder
2 teaspoons cayenne pepper
1 teaspoons ground white pepper
1 teaspoons ground black pepper
1 teaspoon celery seed
1 teaspoon dried thyme leaves
1 teaspoon salt
1 teaspoon brown sugar (optional or to taste)


Coat fish filets with olive oil and then sprinkle liberally with blackening spice.  Then grill or pan cook fish as desired.
