Oatmeal Raisin Cookies




1 cup vegetable shortening
¾ cup granulated sugar
¾ cup brown sugar
2 eggs
1 teaspoon vanilla
3 tablespoons water
1 ½ cups flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups uncooked oatmeal (not instant)
½ cup chopped walnuts
½ cup raisins

Preheat oven to 350 degrees and line cookie sheets with parchment paper.  Combine the shortening and sugars and beat.  Add the eggs, vanilla, and water, and beat until light and fluffy.  Mix in flour, salt, soda, and cinnamon.  Hand stir in oatmeal, walnuts and raisins and drop by teaspoons on parchment lined baking sheets.  Flatten with fork or wet hand and bake for 10 to 12 minutes depending on how crisp of chewy you want the cookie to be.
