SPICY CARROT CAKE WITH CREAM CHEESE FROSTING




2 cups all-purpose flour
2 cups sugar
1 t. baking powder
1 t. baking soda
1 t. salt
1t. ground cinnamon
3 cups finely shredded carrot
1 cup cooking oil
4 eggs
2 recipes cream cheese frosting
     Grease and flour a 13x9x2 inch baking pan or 3 nine inch round pans.  In large mixer bowl stir togetherflour, sugar, baking powder, baking soda, salt, and cinnamon; add carrot, oil, and eggs.  Mix till moistened; beat at medium speed of electric mixer for 2 minutes.  Pour into prepared pan.  Bake in 325 degree oven for 30 to 50 minutes or until toothpick inserted comes out clean.  Cool thoroughly on wire rack before turning out.  Frost with cream cheese frosting below.

CREAM CHEESE FROSTING
8 oz. cream cheese at room temperature
6 T. butter at room temperature
2 to 3 cups confectioners sugar
1 t. vanilla
chopped nuts for decoration
     Beat cream cheese and butter together.  While beating slowly, add vanilla and 1 cup of confectioners sugar.  Continue beating and adding confectioners sugar until frosting is of desired spreading consistency.  Frost cake and decorate with chopped nuts.
